SHERRY PEDRO XIMENEZ BODEGA ALBALÀ
The Don Px is a special "Passito" wine, made with Pedro Ximenez variety grapes, which is originally from Central Europe and was brought to Spain by a Carlos V German soldier called Peter Siemens. After the grapes are harvested, the grape bunches are spread out in a single layer (a process called "extendido"). The basic parameters of the Don Px wine are:
- Single-vine variety: Pedro Ximénez.
- Sun-drying time: 10-15 days
- Yield: 2.5 - 3.5 kg of grapes per liter of wine.
- Alcohol %: 17
- Sugars: 400 - 450 g/l
- Density: from 1.160 to 1.180
- Total acidity: 3.5 g/l
- pH: 4.5
- Color: from amber to a delicate brown
After the resulting musts are assembled, superior quality alcohol is added to obtain the basic Pedro Ximenez with 22 degrees Beaumé and 9 degrees of alcohol, whose name is Don Px. The wine rests for six months, during which time it settles and all traces of the added alcohol disappear. Afterwards, the wine can be bottled. The bottles are stored in a wine cellar for an additional 6 months before they are sold.


RAISINS
This is obtained by sun-drying one of the variety of grapes called apirene, in other words without seeds, until most of the water contained in the grapes is eliminated. We purchase these grapes in Turkey or in Australia, where we find organic raisins that we consider to be the best product by far. We use the Sultana variety, which is small and less bitter.
