The persimmon tree is also called "the tree of peace" since only a few trees of this fruit survived after the devastating bombing of Nagasaki in Japan during WWII. Rich in sugars and beta-carotene, persimmons mature only in autumn; interestingly, the fruits are collected only when all the leaves have fallen off the tree. Persimmons must be picked when fully ripe, or soft if not squashy to the touch, otherwise a slight sensation of astringency will be caused by tannins in the flesh.
