This sorbet is one of the winter flavors star, because pears (like apples) keep well after being picked. The Decana del Comizio and Martin Sec cultivars, which we have chosen for this flavor, are rather late as they are picked in October and are a greenish yellow when fully ripe. Enjoy the pleasant and slightly granular feel typical of this fruit.

DECANA OR MARTIN SEC PEAR
Italy is one of the largest producers in the world of this fruit which is characterized by a good balance between sugars and acids and a good quantity of mineral salts and fiber. It is rarely found in gelato, because it is difficult to process for semi-processed pastes due to its irregular shape and its rapid oxidation during processing. This is of course not the case at Grom : from the different and well known variants on the market (William, Abate, Conference, Kaiser) we have chosen for our gelato the Decana del Comizio, known for its juiciness and sweetness, and the Martin Sec cultivar, which we appreciate for its sweet but full-bodied fiber. Both varieties are grown on our farm .

Yes, its absolutely true! Just like you would do at home, GROM has chosen to make its fruit sorbets, chocolate sorbet and espresso coffee with Sparea Spring Water. The water of the Sparea Spring comes from a unique place in the Alps of Piedmont, and is a pure, extremely light water that is the best accompaniment for the fruit of our farm mura mura.
