In Piedmontese, “meliga” means "corn": the principal ingredient of these cookies. Our secret? We add whole wheat flour made from a variety of corn and grounded for us by the Marello Mill. We almost forgot: these biscuits are Gluten Free!
Many flavors of Italian gelato are egg-based. The eggs we use for our gelato are from cage-free hens.
We delicately grate the peel of our Siracusa IGP lemons, paying close attention to not include the white pith which, due to its bitterness, could alter the taste of our gelato.
There are two different categories of Vanilla: the black vanilla and the red vanilla. The first one is the known between cooking lovers: the pod has to be soft, easy to cleave, with a pure and sincere aroma; the production of black vanilla (the one we use) represents a small part of the entire harvest.
