This is one of our most popular sorbets, and takes very long careful processing: the figs are peeled by hand one by one and with great care, but all that effort is worth it when you try it. You can find this sorbet in our gelaterias in August and September, when the fig is fully ripened and at its best.
Dottato: is the name of the best white fig tree, which we grow at the farm Mura Mura® in Costigliole d'Asti. With a long and slightly flattened shape, it matures between July and October; of small to medium size, it must strictly be harvested by hand because reaching full maturity best on the tree, it becomes very soft and could fall apart if handled without care.
Yes, you read correctly. Just as you would do, we chose to make our sorbets and Sicilian granita with water from "Sparea®" Springs. This water is born in a unique niche in the Piedmontese Alps and is extremely light and pure - ideal for accompanying the fruit from the organic farm, Mura Mura®. We are a little crazy… but you can certainly taste the difference!
