Sheep ricotta, one of the finest ingredients in Mediterranean bakeries, encounters fig preserves: the perfect union between candied winter echoes and the fig taste of an impending summer. A transitional flavor from Christmas to the fruits that ripen in the sun.
We use this ricotta, obtained from the serum of sheep's milk, in compliance with the best Sicilian tradition. We assure you that it was not easy to find it fresh and with a quality capable of satisfying our expectations, but in the end we did it and today we can offer our customers a Sicilian Cassata with real ricotta made from sheep's milk (which is very rare in the gelato world) and lightly toasted Sicilian almonds.
Dottato: is the name of the best white fig tree, which we grow at the farm Mura Mura® in Costigliole d'Asti. With a long and slightly flattened shape, it matures between July and October; of small to medium size, it must strictly be harvested by hand because reaching full maturity best on the tree, it becomes very soft and could fall apart if handled without care.
